Vinification:
Manual harvest mid-October (yield 40 qt/ha). Mechanical destemming and crushing. Spontaneous fermentation. Maceration 15 days with pumping over. No filtration, clarification or alteration of the natural oenological parameters. Aging 12 months in stainless steel tanks, plus 6 months in bottle.
Sulphites:
free 6-9 mg/l; total 12-27 mg/l.
