The Cà de Noci farm, certified organic since 1993, is located at the foot of the Reggio Emilia Apennines, where five hectares of vineyards are cultivated along the valley of the Crostolo torrent. The land, stony and loamy, is home to vines typical of the area; in addition to lambrusco, malbo gentile, sgavetta, lambrusco di Montericco and spergola, with vineyards that date back to the 1970s. The cultivations are the result of a continuous commitment to study and deepening that also involves researchers and scholars from the University of Modena and Reggio Emilia. The soil, vital and fruitful, not contaminated by chemical fertilizers, allows to obtain products with an authentic soul, which express all their natural character, without compromise. Certified organic farming uses only copper and sulphur, and the nutrients for the plants are only organic elements of plant origin. The wines produced all have a unique character, the harvest is manual and no sulphur dioxide is added. Among the most sought-after products of the Cà de Noci winery is the traditional zero dosage method sparkling wine Riserva dei Fratelli: made from pure spergola grapes, from vineyards over 45 years old, it is aged for 36 months before disgorging: it is a very special product that expresses the character of the vine. Sottobosco is a sparkling red, a blend of lambrusco grasparossa, malbo gentile, sgavetta and lambrusco di montericco on the lees; Querciole, again from pure spergola grapes, re-fermented in the bottle; Gheppio instead is a long aged red, made from cabernet sauvignon, malbo gentile and other native vines in varying proportions, with a mysterious soul. Cà de Noci also produces La rugiada di San Giovanni, an organic nocino made from the fruit of the trees surrounding the winery, Saba, a traditional cooked must, and the traditional balsamic vinegar of Reggio Emilia DOP.
