Vinification: the grapes are destemmed and left to macerate for about 6 hours. The wine is then racked into cement vats and spontaneously fermented in tanks for about 20 days. At the end of fermentation it is decanted again into cement vats where it is kept until the following spring, when it is ready to take its foam. Ageing: minimum 48 months, subsequent disgorgement and refilling with the same wine.
