It comes from soils of Aeolian sand and siliceous clay on a substrate of limestone. Fermentation takes place in cement barrels. Maceration for 20 days and sweet extraction of the must. The malolactic fermentation takes place in barriques, before being transferred for refinement in 500 litre barrels, partly new, partly 1 year old and partly 2 years old.
