Serragghia wine comes from pure Zibibbo grapes vinified dry unlike many other producers on the island. The four hectares of vineyards, all bush-trained and located on volcanic soil, are located entirely in the Serragghia district and are cultivated with very low yields without any chemical or synthetic intervention. Only grapes, therefore, that absorb the moods and influences of the island, until the time of manual harvesting, which takes place from the second half of August to the second ten days of October. After destemming and crushing, the grapes are macerated on the macerated on the skins and fermented in 220-litre amphorae amphorae buried in the tuff.
