Produced with Barbera grapes that are hand-picked in the "Lunga" vineyard of the Solana farm when acidity and freshness are intense. The grapes are vinified in cement vats, without temperature control, for a week. To the Barbera wine, already fermented and clear, in the month of November is made an addition - about 10% - of Croatina dried in the cellar on mats, to make a second fermentation and aging with these skins for another four months. It is then bottled directly from the cement tank.
