San Lurins Re-fermented in the bottle is made from the precious grapes of old vineyards of Malvasia Istriana. The bunches are harvested slightly in advance to ensure the right freshness to the wine. After soft pressing, the must is cold decanted for 12-15 hours and then fermented at a controlled temperature of 16-18 °C. The wine matures on the noble lees until the following spring, when it is drawn off and bottled. Refermentation takes place in the bottle according to the Ancestral Method, without dégorgement, leaving the spent yeasts on the bottom. Refinement on the lees in the bottle starts at 12-15 months and can last up to 24, depending on when it is put on the market. In the glass it has a light straw yellow colour, with a lively and delicate froth. The bouquet is reminiscent of wild flowers, fragrant citrus notes, aromas of fresh fruit and hints of bread crust. On the palate it is savoury and elegant, with an exuberant and rich sip that stretches towards a finish characterised by a vibrant mineral freshness.
