Grape variety: Zibibbo

Alcoholic strength: 13% vol

Food Match: Fish first courses, Fish

Vinification: grapes harvested in early September, spontaneous fermentation. The must remains in contact with the skins for about a week; after the manual pressing it is transferred into exhausted barrels. It is not filtered or clarified and contains no added sulphites.

Serving temperature: 12-14° C

It is advisable to open the bottle even one hour before; it holds up very well the contact with the air and after a few days in the open bottle it is even more harmonic.

Note: Grapes from vines over 80 years old, grown on land rich in pumice stone that, in Pantelleria, are called land SOKI SOKI.
